holiday haystacks


Each year, Josh and I excitedly await our delivery of haystacks from his parents. They're a perfect mix of sweet and savory with the combination of butterscotch, peanut butter, peanuts, and chow mein noodles. They usually sit out in a tin on our counter for a couple weeks before Christmas. I break off tiny pieces everyday, and Josh sort of ignores the tin for a couple of days and then attacks full force.

His parents use a recipe similar to the one below. I seriously suggest you consider adding this to your list of holiday cookies and candy you'll be making this year. They're simple and addicting.

Haystacks

1 cup butterscotch chips
1/2 cup peanut butter
1/2 cup peanuts
2 cups chow mein noodles

Melt the butterscotch chips and peanut butter in the microwave for 3-5 minutes until smooth. Add remaining ingredients and blend to coat noodles thoroughly. Drop by teaspoons onto wax paper.

  1. these were always my favorite too...i only make them for work-related food events, otherwise i will eat the entire batch myself!!
