a pair of ice cream sandwiches


This past weekend, my friend Ashley threw her boyfriend a wonderful 30th birthday party at her home (I'll post pictures of the food and decorations tomorrow). Her roommate, Kaelin, made some epic ice cream sandwiches that I just couldn't get enough of. So I thought I would share them with you fine people.


The concept of ice cream sandwiches is truly fantastic. I mean, you take 2 cookies (we're off to a really good start here) and sandwich them around ice cream. There's nothing not to like about this situation. And, if you use homemade ice cream, you totally score extra points.


Kaelin whipped up some freshly baked cookies (chocolate chip and sugar) and then mixed up some homemade vanilla bean (seriously incredible) and butter pecan ice creams. And then she rolled the chocolate chip vanilla bean sandwiches in colorful sprinkles. (She's an overachiever.)

I think that every birthday party deserves ice cream sandwiches.
